When you think of adding vinegar to your diet, most people don’t consider desserts, but vinegar’s versatile nature means it can complement sweet foods as well as savory. Its tangy acidity can lend a delightful contrast to the sweetness of confections, elevating flavors and imparting a subtle complexity not found elsewhere.

Let’s talk about what vinegar-infused desserts look like while we share recipes in this blog post. We hope you’ll join us in our love for vinegar in new and unexpected ways!

Types Of Vinegar To Use In Desserts

Using vinegar in your favorite dessert recipes isn’t as simple as splashing in a few tablespoons. Different types of vinegar have different flavor profiles and can complement different types of dishes, so be sure you choose the right one to pair with your sweets.

Balsamic Vinegar

Balsamic is one of the most well-known vinegars to be used in desserts due to its rich flavor and syrupy consistency. It can add a sweet and tangy depth to desserts like berries, ice cream, and chocolate-based treats.

Apple Cider Vinegar

While it has a strong flavor, apple cider vinegar also has fruity undertones with a mild acidity. This makes it ideal to use in baking recipes to add moisture and activate leavening agents like baking soda for fluffy cakes, cookies, and other baked goods.

Champagne Vinegar

This delicate vinegar is an excellent choice to add to light, airy desserts like fruit tarts, custards, and meringues.

Red Wine Vinegar

Red wine vinegar has a robust flavor profile, just like red wine does, so it can be an ideal addition to fruit-based desserts that can stand up to the flavors and complement fruits like blueberries, cherries, and other stone fruits.

Our Favorite Vinegar-Based Desserts

From the tangy sweetness of balsamic-infused berries to the tender crumb of cakes moistened with apple cider vinegar, vinegar-based desserts offer a delightful departure from the ordinary. We hope you try a few of our favorites!

Balsamic Strawberry Shortcake

  1. Slice fresh strawberries and toss them with a drizzle of balsamic vinegar.
  2. Allow the strawberries to sit and macerate for 15-20 minutes at room temperature to develop the flavor.
  3. Spoon the strawberries over split shortcakes or biscuits and top with whipped cream before serving.

Apple Cider Vinegar Pie

  • 2 Pie Crusts (either storebought or pre-made)
  • 4-6 Large Granny Smith Apples (peeled and sliced)
  • ¼ cup Granulated Sugar
  • 1 Tbsp. Ground Cinnamon
  • 1 Tbsp. Apple Cider Vinegar or Apple Balsamic Vinegar
  1. Preheat oven to 375 degrees and line a pie dish with one of the crusts.
  2. Toss the apples with sugar, cinnamon, and apple cider vinegar until well-coated.
  3. Arrange apples in the pie plate, then cover with the second crust, crimping at the edges.
  4. Slice 2-4 small steam vents into the top of the pie with a sharp knife.
  5. Bake 45-50 minutes until the crust is golden and the apples are tender.

Raspberry Vinegar Sorbet

  1. Combine equal parts sugar and water in a saucepan, heating until the sugar completely dissolves and the mixture is thickened. Set aside to cool.
  2. Once the syrup is cool, blend it with fresh raspberries and a splash of raspberry vinegar until smooth.
  3. Strain to remove seeds, then churn in an ice cream maker according to the manufacturer’s instructions until it reaches a sorbet consistency.
  4. Transfer to the freezer or serve immediately.
