4 large sweet potatoes
1 box chicken stock (low sodium)
1 vidalia onion sliced and sautéed
½ stick of butter
1 tablespoon Mushroom sage olive oil (The Olive Branch)
1 Tablespoon Berbere spice from Spice Merchants
½ cup sour cream
In a large deep soup pot, sautée sliced onion with a pinch of salt and pepper and the olive oil.
Skin, cube, and add the sweet potato to the sautéed onions.
Add low sodium chicken stock and ½ stick of butter, and cook on medium for 25-30 minutes or until sweet potatoes are mushy.
Carefully pour sweet potato and liquid based sauce into a blender.
Add a large pinch of salt and pepper to taste, the sour cream, Berbere, and blend until the soup is a creamy texture. No streaks of white sour cream should show.
Soup will be extremely hot.
Allow to cool a bit and serve.
