Since olive oil is made from a fruit, it does have a shelf life. That means it can expire and go rancid if not stored properly or used in a timely manner. 

Most extra virgin olive oils will last 12-18 months if stored well. Extra virgin olive oils are at risk of going rancid after 18 months, which makes the taste change to bitter, sour, or even give off a chemical smell and taste.

How To Keep Your Olive Oil Fresh Longer

Once you open a bottle of olive oil, it will start to degrade because it has been exposed to light, air, and heat. That’s why we recommend using your olive oil within 12 months to ensure you not only get the best taste but can still reap the health benefits extra virgin olive oil can bring.

Don’t Store It By The Stove

Being exposed to heat regularly can make your olive oil degrade much faster. While it can be convenient to keep your olive oil next to the stovetop, consider storing it in a nearby cabinet instead to better preserve it.

Keep Olive Oil In A Cruet

Ideally, use a ceramic cruet to store your olive oil. It will block out light and air and can even offer some protection against heat. Be sure to wash it thoroughly before refilling it, otherwise, you risk mixing old oil in with your fresh olive oil!
